I Need A New Recipe

I am going to a recipe party in the next week and I need a new recipe. So the challenge to you guys is to send me your favorite recipe because I'm at a loss as to what to take. My recipe box needs a little uplift with some good ideas. I feel I make the same stuff evening after evening. So if you guys have a good recipe, and I know you do, please shoot it my way because I know my friends do not want what is in my box. Thanks guys.

I just made these for a party we went to this afternoon. They are wonderful and smell heavenly while they are cooking. I found I needed to cook longer than the recipe called for ....more like 9-10 minutes. I also smooshed the balls with the bottom of a glass cup to get them to cook more evenly.

This is easy and quick and always gets compliments: Rice Recipe - In a square baking dish, melt 1/4 to 1/2 stick of butter (depends on how you like it and how many calories you want), pour 1 cup of rice over the melted butter, then pour 1 can of mushrooms (drained), 1 can of Campbell's beef consomme, and 1 can of Campbell's french onion soup over the rice and bake until rice is done (usually 350 for approx 1 hr.) Enjoy.

My favorite dessert/salad to take to summer cook outs!

Taffy Apple Salad

6 full-sized Snickers bars
6 Granny Smith apples
8 oz. package cream cheese, softened
1 jar marshmallow creme
1 8-oz. tub of Cool Whip


Cut Snickers and apples into bite-sized pieces. Cover and set aside.
In a large mixing bowl, combine cream cheese, marshmallow creme and Cool Whip. Blend until smooth.
Fold in the Snickers bars and apples.

The BEST Chicken Recipe ever (on the grill)

Peanut Ginger Chicken w/ Tropical Fruit Salsa

8 chicken breasts (about 3 lb.)
cup water
1/2 cup creamy peanut butter
1/4 cup soy sauce
2 Tbsp. salad oil
2 Tbsp. cider vinegar
4 cloves garlic, minced
l Tbsp. grated gingerroot or tsp. ground ginger
1/2 to tsp. crushed red pepper
1 cup chopped fresh fruit, such as peeled peaches, nectarines, pears, plums or mangos
1 cup chopped, seeded cucumber
2 Tbsp. thinly sliced green onion
1 Tbsp. sugar
1 Tbsp. salad oil
1 Tbsp. cider vinegar
Peach, nectarine, pear, or plum wedges (optional)

Rinse chicken. Pat chicken dry with paper towels. Place the chicken in a plastic bag set in a shallow bowl. For marinade, in a medium mixing bowl gradually stir water into peanut butter. (The mixture will stiffen at first.) Stir in soy sauce, the 2 tablespoons salad oil, the 2 tablespoons vinegar, the garlic, gingerroot or ginger, and red pepper. Pour over chicken. Seal bag; turn to coat chicken with marinade. Chill for 12 to 24 hours; turn occasionally. For salsa, in a medium mixing bowl combine chopped fruit, cucumber, green onion, sugar, the 1 tablespoon oil, and the 1 tablespoon vinegar. Cover and chill for I to 2 hours. In a grill with a cover, arrange medium-hot coals around a drip pan. Test for medium heat above the pan. Remove chicken from marinade; discard marinade. Place chicken on the grill rack over the drip pan but not over the coals. Cover and grill chicken for about 15 minutes or till no pink remains. Spoon salsa onto plates and serve chicken on salsa.

I love cucumbers, red onion, feta and balsalmic vinegar. I also have a killer potato salad that I think I'll make and post tomorrow!
